Ever had carrot and courgette soup? It is delicious and was the inspiration for this juice. Oh and it’s not only delicious, but has some serious health benefits too.
Were you told as a kid to eat your carrots as they help you see in the dark? Well, carrots are rich in beta-carotene, which is converted into vitamin A by your liver, which is transformed in the retina, to rhodopsin, a purple pigment necessary for night vision! Carrots have also been shown in studies to have many health benefits including reducing the risk of lung cancer, breast cancer and colon cancer!
Courgette (zucchini) is also a great source of vitamin A, as well as vitamin C, an antioxidant vitamin that may help prevent the cellular damage caused by environmental toxins and harmful chemical processes within your body. Vitamin C may also support your immune system and promote respiratory health, according to the University of Maryland Medical Center.
And pears? Pears contain phytonutrients, which are known to have anti-inflammatory benefits. This results in a decreased risk of common chronic diseases that start with chronic inflammation and oxidative stress like type 2 diabetes and even heart disease.
