Sweet potatoes are an excellent and inexpensive food source. I’ve often used these deep orange-fleshed nutritional powerhouses in soups, curries, etc but this is the first time I’ve used them in a juice recipe.
Sweet potatoes are rich in potassium, vitamin B6, beta-carotene (vitamin A), vitamin C and vitamin E.
- 1 sweet potato
- 1/2 pineapple
- 1/2 lemon (skin on)
- 1 thumb sized chunk of ginger (or a bit more if you are feeling brave!)
How to Make It
- Wash / clean all the produce
- Juice the lemon
- Juice the ginger
- Chop and juice the pineapple
- Chop (if necessary) and juice the sweet potato
