Can you have a sweet tasting, delicious juice made almost entirely from root vegetables? Hell yes and this bad boy juicing recipe has serious health benefits too, especially for the heart.
Drinking beetroot juice (beets) has been shown to dramatically lower the risk of heart disease and strokes. Nitrates which naturally occur in beetroot are believed to be the cause of its beneficial effects. Oh, and Olympic gold medalist David Weir says it’s “better than caffiene”.
Parsnips are also great for the heart. They come packed with potassium and folate, two nutrients important for cardiovascular health. Potassium helps protects you from high blood pressure, while folate helps lower your blood levels of homocysteine, an amino acid associated with an increased risk of heart disease. Folate also promotes red blood cell growth, while potassium supports nerve function.
- 1/2 beetroot
- 4 carrots
- 2 parsnips
- 1 thumb sized chunk of ginger (or a bit more if you are feeling brave!)
- 1/2 lemon (wax free and skin on)
How to Make It
Simply juice the beetroot, carrots, parsnips, lemon and ginger and serve over ice.
