I love roasting vegetables. I find that roasting veg tends to help them take on a different, sweet flavour. Here is a simple, easy to make roasted vegetable soup recipe.

Juicy Ingredients (makes enough for 3-4 people)

  • 1 medium swede (Swedish turnip – known as┬árutabaga in the US)
  • 4 large carrots
  • 1 large red onion
  • 2 cloves of garlic
  • 1 vegetable stock cube
  • 1 pint / 500ml water
  • 1 tbsp of olive oil
  • 1 pinch of sea salt
  • 1 pinch of ground black pepper

How to Make It

  1. Peel the swede and chop into 1 inch / 2cm cubes
  2. Chop carrots into 1 inch / 2cm chunks
  3. Peel and chop the onions and garlic
  4. Heat a roasting dish and add the olive oil
  5. Once the oil has heated add the swede, carrots, onion and garlic
  6. Roast in a preheated oven (200 degrees C) for 30 – 40 minutes
  7. Boil the water in a kettle and add to a jug with the stock cube
  8. Mix the stock
  9. Add salt and pepper to the stock
  10. Transfer the roasted ingredients and stock to a blender or food processor and blend until smooth (you may need to do this is batches)
  11. Serve in bowls
