There is nothing most Brits love more than a curry. This recipe is a healthy, raw, plant based twist on a classic Red Thai Curry. A little collaborative effort with Jay Halford from Charlton Kings Coffee Shop and Deli in Cheltenham.

Red Thai Curry Sauce

Juicy Ingredients

  • 200ml apple cider vinegar
  • 100ml tamari soya sauce
  • 100g cashew nuts (soaked for an hour)
  • 50ml water
  • 2 tbsp balti curry paste
  • 1 tbsp coconut nectar
  • 1 clove garlic
  • Pinch of Himalayan salt
  • Pinch of turmeric powder
  • Pinch of cayenne pepper
  • Pinch of garam masala
  • 4 cracks of black pepper

How to Make

Put all the ingredients in an Optimum 9400 (or similar high speed blender) and blend until smooth.

Suggested Curry Ingredients

Juicy Ingredients

  • 4 large handfuls of kale
  • 100g goji berries
  • 50g hemp seeds
  • 50g chia seeds
  • 1/2 red onion
  • 1 red pepper
  • 2 tomatoes
  • 1 red chilli

How to Make

Chop the kale, red onion, red pepper, tomatoes and chilli. Mix all ingredients in a bowl.

Serving suggestion

Pour the curry sauce over the other ingredients and mix by hand. Best served with raw coconut infused parsnip rice.
