Here is a delicious raw, living food tacos taken from a recent workshop I delivered alongside my raw chef mate, Jay Halford. This recipe makes four raw tacos.

Before assembling the tacos, the first step is to prepare the fillings.

Walnut and Sun-dried Tomato Filling

This has a delicious “meaty” flavour and will be the main filling for the tacos.

Juicy Ingredients

  • 100g Walnuts (unsoaked)
  • 50g sun-dried tomato (soaked for minimum of 3 hours)
  • 1 tomato
  • 1 clove garlic
  • 3 tbsp tamari
  • 1 tsp paprika

How to Make

Place in the walnuts in a high speed blender like the Optimum 9400 and blitz until broken down into fine pieces. Add remaining ingredients and pulse until blended. You may need to use the tamper to keep the mixture moving.

Paprika Cashew Cream

This is an incredibly quick and easy to make creamy dressing that works well with lots of raw dishes.

Juicy Ingredients

  • 100g cashews soaked 2-3 hours
  • Juice 1 lemon
  • 3 tbsp apple cider vinegar
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • 1/2 tsp Himalayan salt

How to Make

Simply drain the nuts and then put in the  in a high speed blender like the Optimum 9400. Add the other ingredients and blend until smooth.

Romaine and Walnut Tacos

 

Assembling the Tacos

Juicy Ingredients

  • 4 romaine leaves
  • 1/2 avocado
  • 1 tomato

How to Make

  1. Finely chop the avocado and tomato
  2. Take a romaine leaf and using a spoon add approximately 1/4 of the walnut and sun-dried tomato filling
  3. Add 1/4 of the avocado and tomato
  4. Dress with the paprika cashew cream
  5. Repeat for remaining romaine leaves
