This Chocolate Orange Ganache Cake recipe went down SO well at today’s Raw Food Made Simple course that I thought I should share it with you too!

Juicy Ingredients

For the base:

  • 300g cashews (soaked for 2 hours)
  • 200g dates
  • 1 tbsp coconut oil
  • Zest of 2 oranges

For the Ganache:

  • 6 small avocados
  • 200g coconut sugar
  • 150g raw cacao
  • 50g lacuma powder
  • 150g coconut oil
  • 20ml filtered water
  • 3 tsp vanilla extract
  • Pinch pink Himalayan salt

Raw Chocolate Orange Ganache Cake (Vegan)

How to Make

For the base:

  1. Drain the cashews
  2. Blend the cashews, dates and orange zest in a high speed blender (such as the Optimum 9400) or a food processor
  3. Line a springform pan
  4. Press mixture into pan and place in the freezer to set

For the ganache:

  1. Place all ingredients expect the coconut oil into a high speed blender (such as the Optimum 9400) or a food processor
  2. Blend until smooth
  3. Warm the coconut oil so that it is liquid
  4. With the blender running add the coconut oil to the mixture and blend for a further 30 seconds

Assembly and finishing touches:

  1. Spoon ganache mixture onto the base
  2. Return to freezer until set
  3. Slice and serve

I made the recipe in the Optimum 9400 blender.
