Ginger is an essential component of Chinese and Ayurvedic medicine, and for good reason too. This herb is a natural anti-inflammatory, antiseptic, anti-fungal and anti-spasmodic.

Juicy Ingredients (makes enough for 2-3 people)

  • 1 medium onion
  • 2 cloves garlic
  • 2 thumb sized pieces of ginger
  • 1/2 tsp ground cumin
  • 4 parsnips
  • 1 vegetable stock cube
  • 1 pint / 500ml water
  • Himalayan salt and freshly ground black pepper
  • 2 tbsp pumpkin seeds

How to Make It

  1. Peel the onion, garlic and ginger
  2. Chop all ingredients
  3. Place onion, garlic, ginger, cumin, parsnips, stock cube, water, salt and pepper in a high speed blender (such as the Optimum 9400)
  4. Blend until smooth
  5. For warm soup, continue blending at high speed for 4-5 minutes or transfer to a pan and gently heat on the hob
  6. Transfer to serving bowls
  7. Top with pumpkin seeds
