When I taught this recipe for raw vegan mince pies at one of my Raw Food Made Simple courses it was SO popular, I knew I had to share it with more people… so here it is!

There are 4 key steps to the recipe. These are making each of the key elements (the pie casings, the mince pie filling and the cashew cream) and then assembling the finished raw mince pies.

Pie Casings (makes 12)

Juicy Ingredients:

  • 2 cups raw flaked oats
  • 2 cups brazil nuts
  • 3 tbsp coconut nectar
  • 2 tbsp coconut milk
  • Juice of 1 lemon
  • Pinch of Himalayan salt

How to Make

  1. Using a high speed blender (such as the Optimum G2.1) grind the oats and nuts into flour
  2. Add the remaining ingredients and blend until fully combined
  3. Cover a 12 hole muffin tray with cling film
  4. Press the pie mixture into each of the 12 holes
  5. Dehydrate for 2-3 hours at 115 degrees Fahrenheit
  6. Remove pies casing from the tray and transfer to a standard dehydrator sheet
  7. Dehydrate for a further 8-10 hours at 115 degrees Fahrenheit

Mince Pie Filling

Juicy Ingredients:

  • 1 1/2 cups dates
  • 1/2 cup raisins
  • 1/2 cup sultanas
  • 2 apples
  • Juice of 1 orange
  • 1 tsp mixed spice

How to Make

  1. Blend the dates, orange juice and mixed spice in a high speed blender (such as the Optimum G2.1) until smooth
  2. Chop the apples into small pieces
  3. Add apple, raisins and sultanas to the blender and pulse to a ‘chunky’ consistency

Vanilla Cashew Cream

Juicy Ingredients:

  • 1 cup cashews (soaked for 2-3 hours)
  • 2 tbsp coconut oil (warmed until liquid)
  • 2 tbsp coconut nectar
  • 2 tbsp filtered water
  • 1/2 teaspoon vanilla extract
  • Pinch of Himalayan salt

How to Make

  1. Drain the cashew and add to a high speed blender (such as the Optimum G2.1)
  2. Add the remaining ingredients and blend until smooth

Note: If required add additional filtered water to achieve desired consistency

Assembling the Mince Pies

  1. Fill the pie casing with Mince Pie Filling
  2. Top with Vanilla Cashew Cream
  3. Finish with a pinch of cinnamon (or a few goji berries)
